Great on the BBQ or under the Grill
This is perhaps one of our simplest recipes but it packs so much flavour if you can allow it to marinade for a few hours. Perfect for cooking on the BBQ or under the grill, we recommend you make plenty as leftovers make excellent sandwich fillers or an ingredient for a tasty salad.
To serve 4 you will need;
500g skinless chicken, (we used chicken thigh fillets)
Half packet of Bite Me Spices Tandoori Spice Blend
100ml natural yoghurt
1 tbsp lemon juice
2 cloves garlic, grated (optional)
Mix the spices with the yoghurt and lemon juice. Add grated fresh garlic if desired. Stir well. The mix should be quite a thick paste.
Cover chicken well with the paste. Cover the dish with clingfilm and place in the fridge overnight or for a minimum of 2 hours.
If cooking on the BBQ cook on direct heat until cooked through. Cooking times will depend on the heat of the coals and the thickness of the chicken but ours took roughly 5 minutes each side.
If cooking under the grill, ensure heat is on high. Cooking times should be about 7 minutes but check for doneness before consuming.
For the raita, you will need
150ml natural yoghurt
1 clove garlic, grated
1/2 cucumber, grated, then squeezed to remove moisture
1 tbsp lime juice
1/2 tsp ground cumin
Small bunch of fresh coriander, finely chopped
Salt and pepper to taste
- Mix all ingredients together and stir. Serve chilled.
