Cajun Halloumi Kebabs

I feel somewhat of a cheat calling this a recipe, it's more of an assembly job but it is delicious, simple and perfect for outdoor cooking. We've tested these on the barbecue and also under a preheated grill . Timings are roughly the same but will depend on the heat of your coals on the barbecue.

Ingredients

3 tbsp Bite Me Spices Cajun Spice Mix

8 large new potatoes (boiled until just cooked, then cooled)

1 red pepper, cut into large chunks

10 cherry tomatoes

125g halloumi, about half a pack cut into large chunks

1 medium onion, cut into wedges

8 wooden or metal skewers (If using wooden skewers soak for 30 minutes before cooking).

Method

  • Place all the cut ingredients into a large bowl. Add 1 tbsp of olive oil and mix to coat evenly. Add 3 tbsp of Bite Me Spices Cajun Mix and stir well to coat all the ingredients.
  • Carefully skewer the ingredients ensuring each skewer has a variety of vegetables and halloumi. Place on hot coals or under a preheated grill, turning occasionally to prevent burning. They should take approximately 8 minutes in total to cook. Delicious served with a crisp salad and with luck, eaten in the sunshine.
